Why should we eat salmon?

One of the main reasons fish consumption is increasing in Canada is the desire to eat more healthily. Of all the different types of fish, salmon has received the most praise for being a nutritional marvel. The health benefits of salmon include proper cardiovascular health, correct muscle and tissue development, boosted eye health, and efficient body metabolism.

This well known and popular fish is a very good source of easily digestible proteins (amino acids), and fatty acids like Omega-3 in the form of triglyceride, as well as vitamins like vitamin D, vitamin A and some members of the B vitamin family. It also contains minerals like selenium, zinc, phosphorus, calcium and iron.

Here is a suggestion for a delicious, healthy and simple salmon recipe.

Salmon with Pea Puree

Ingredients

  • Cooking spray
  • 1 c. sliced leeks
  • 1½ c. peas
  • ½ c. white wine
  • ¼ c. water
  • 4 skinless salmon fillets
  • ¼ tsp. salt
  • ¼ c. half-and-half
  • ¼ tsp. salt
  • ¼ tsp. pepper

Directions

  1. Spray 2-quart saucepan with cooking spray. Cook sliced leeks on medium 2 minutes, stirring. Add peas, white wine, and water; heat to boiling. Reduce heat to medium; simmer 5 to 6 minutes or until reduced by half.
  2. Meanwhile, spray 12-inch nonstick skillet with cooking spray; heat on medium 1 minute. Sprinkle salmon fillets with 1/4 teaspoon salt; cook 10 minutes or until just opaque in center, turning once.
  3. While fish cooks, puree pea mixture in blender with half-and-half, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Serve with salmon.
