Corn and its health benefits
Sweet corn is one of summer’s simplest, purest pleasures. A fresh-picked ear, grilled to caramelized perfection and lightly buttered, offers incredible, complex sweetness, an intoxicating texture and plenty of nutrition benefits to boot.

But many people have convinced themselves that sweet corn is bad. But it’s simply not true.

 

Corn not only provides the necessary calories for healthy, daily metabolism, but is also a rich source of vitamin A,vitamin B,vitamin E and many minerals. Its high fiber content ensures that it plays a significant role in the prevention of digestive ailments like constipation and hemorrhoids as well as colorectal cancer. The antioxidants present in corn also act as anti-carcinogenic agents and prevent Alzheimer’s disease.

Mexican Grilled Corn

 

Ingredients

  • 2 tablespoons low-fat mayonnaise
  • 2 tablespoons nonfat plain yogurt
  • 1/2 teaspoon chili powder
  • 4 ears corn, husked
  • 4 tablespoons finely shredded Cotija or Parmesan cheese
  • 1 lime, quartered

 

Preparation

  1. Preheat grill to medium-high.
  2. Combine mayonnaise, yogurt and chili powder in a small bowl.
  3. Grill corn, turning occasionally, until marked and tender, 8 to 12 minutes total.  Spread each ear with 1 tablespoon of the sauce and sprinkle with 1 tablespoon Cotija or Parmesan
  4. Serve with lime wedges.
