Originally made by Trappist monks, Saint-Paulin is a semi-soft, uncooked, pressed cheese. It is interior ripened for 4 weeks and made with pasteurized milk. Its smooth surface is covered in an orangey red edible film. It features milk and yogurt aromas and reveals a buttery, nutty flavour that is slightly tangy.
